Mom's Recipes - Part I

White Polao in Raisins and Saffron
Dearest,
Today we begin a new journey into the world of Indian culinary art, brought to you by my mom!
Ingredients:
- Soaked Polao rice
- 4 tsp ghee
- Onions (chopped)
- Rose water + Saffron (just a dash)
- Green chillies
- 1 tsp salt
- 1tsp sugar
Add ghee to pot. Heat. Add onions and stir. Add rice, salt. Add water such that the water level is only half a khunti (the stirrer) above the rice. Bring to boil. Cover for 2 minutes. Test to see if rice is soft. Bring down heat. Add raisins and green chillies at the center. Cover with rice. Sprinkle saffron. Add sugar, mix and serve hot.
